3、Dough Belt Folding & Rolling
Fold the dough belt at 90°, the direction of the gluten network is changed during rolling.
From the single longitudinal rolling to simulates manual horizontal rolling, which makes the dough belt more flexible and improves the quality of the finished product (more chewiness).
4、Constant Temperature & Humidity Ripening
Make the thick dough belt which just pressed out from the rolling machine go out in the constant temperature & humidity box.
The gluten network organization inside the dough belt reaches a stable state, which is more ductile, flexible and delicate.

1、Fully automatic water supply system
Brine mixing device: the salt and alkali which are easy to dissolve with water are stirred and fused with water and supplied to the metering device.
Brine metering device: supply the liquid stirred by the brine mixer to the dough mixer in a steady flow and a fixed quantity. The precise measurement can realize the automatic adding water under constant pressure and uniform, the water addition can be adjusted according to the different flour products.
2、Flour feeding & dough mixing
After feeding the flour by positive pressure air, the water and flour are rapidly and continuously mixed.
Under negative pressure, the flour and water are fully mixed and more uniform, which greatly improves the water content of the dough and makes the gluten network better formed.
The formed dough belt is continuously rolled into a dough belt with a certain thickness by multiple rollers, and then the noodle knife cut it into noodles, the dough belt is automatically fed among the rollers, and the power automatically adjusts the dough belt tension.
Single side synchronous adjustment is convenient, multi-stage production is convenient for transportation and assembly, operation stable.
