The operation of an automated frying machine represents a key stage in modern food processing, efficiently transforming prepared dough pieces into fully cooked, dehydrated products. This process begins as dough blocks, delivered from a preceding cutting and arranging machine, enter the molds of the fryer. These molds are affixed to a moving chain that gradually carries them into a tank of hot oil. To prevent the dough from floating and dislodging during frying, a synchronized lid system is employed. Lids attached to the chain above the molds rotate in unison, covering the dough blocks securely within their molds.

Both the molds and their corresponding lids are designed with numerous small perforations. This critical feature ensures optimal contact between the hot oil and the dough, allowing for uniform heat transfer and consistent cooking. As the chain conveys the covered molds through the oil bath, the intense heat rapidly vaporizes the moisture contained within the dough. The generated steam is effectively expelled through an exhaust system, achieving the primary objective of dehydration and drying. This precise control over moisture removal is essential for product texture, shelf life, and flavor development.

Upon reaching the exit end of the oil tank, the automated mechanism disengages the lids from the molds. The chain's rotation then inverts the molds until their openings face downward. At this point, gravity assists in the release of the fully fried product, which cleanly falls from the mold onto a conveyor or chute, seamlessly advancing to the next stage of packaging or seasoning.
