煮面条时,待水开后先加少许盐(每500克水加盐15克),再下面条,即便煮的时间长些也不会粘糊。
 
煮挂面时不要用大火。因为挂面本身很干,如果用大火煮,水太热,面条表面易形成粘膜,煮成烂糊面。
 
煮挂面时不应当等水沸腾了再下挂面,而应在锅底里有小气泡往上冒时下挂面,然后搅动几下,盖好盖,等锅内水开了再适量添些凉水,等水沸了即熟。这样煮面条速度快,面条柔而汤清。相反,如果水沸了再下挂面,面条表面易粘糊,水分、热量不能很快向里渗透、传导,再加上沸水使面条上下翻滚、相互摩擦,这样煮出的面条外粘、内硬、汤糊。
