At the same time, it also plays a certain role in preventing the finished dough from becoming rancid, prolonging the storage time of the dough. After the excess moisture is blown off by a wind knife, the dense noodles are stretched to be approximately straight, which is used for subsequent cutting and weighing to ensure the quality of the dough, without being too light or too heavy.
