In noodle production, the journey from flour to finished product begins with dough mixing, the first critical unit operation that determines the entire line’s success. Proper hydration is paramount, as it transforms dry flour into a cohesive yet crumbly mass, ready for the compounding stage. Once mixed, the dough, appearing as small, discrete crumbs, is conveyed to the first pair of compound rollers. Here, pressure and friction work together, compressing the crumbs into an integrated, uniform dough sheet. This initial sheeting is not a one-pass process; multiple passes through the compound rollers are essential, as they gradually align the gluten network, building the structural integrity needed for later stages.

After compounding, the dough sheet enters an intermediate resting section, a deceptively simple but vital step. During this rest period, internal stresses from the roller compression are allowed to relax, and moisture redistributes evenly throughout the sheet. This relaxation significantly reduces the risk of cracking and tearing during the subsequent reduction sheeting phase, where roll gaps are progressively narrowed to achieve the precise target thickness required for the final noodle style. Following sheeting, the continuous dough ribbon is slit into individual noodle strands. For dried noodle products, these freshly cut strands are then carefully transferred into multi-stage drying chambers. These chambers are engineered with precisely controlled temperature and relative humidity profiles, ensuring gradual and even moisture removal. This meticulous drying protocol prevents surface case hardening and internal cracking, preserving the noodle’s texture and quality. Companies like Zhengzhou Dongfang Naomu Food Machinery Co., Ltd. specialize in designing integrated lines that optimize each of these interdependent steps, ensuring consistent, high-quality output from batch to batch.
